So my birthday is tomorrow and I'm turning 12, which is kind of wild because when I started Rise and Grind about a year ago, I was just this kid who wanted to try making bread. I didn't know anything. Like, I couldn't even tell you what bulk fermentation meant. Now I'm literally running a small business and selling loaves to actual people, and I've learned way more than just how to bake sourdough.
The obvious thing is that I'm way better at baking now. Like, I can feel Yeaston's readiness just by looking at it. I know when my dough is ready to shape by how it feels in my hands. I understand how the Las Vegas heat completely changes my fermentation timeline in ways I never would have figured out without actually doing this. But it's more than just the bread stuff.
Running this bakery has made me way more responsible. I have to feed Yeaston on schedule or everything falls apart. I have to wake up early and plan my bakes around my homeschool schedule. I have customers depending on me, which is actually kind of pressure but in a good way. It makes me want to show up and do a good job. My dad helps me sometimes, but mostly it's on me to manage everything from mixing to scoring to packing orders.
I've also gotten so much better at problem solving. When something goes wrong, I can't just give up. I've had loaves that came out weird, batches that didn't rise right, times when Yeaston acted sketchy. I had to figure out why and actually fix it instead of just complaining. That's something I use for other stuff now too, not just baking.
And honestly? This whole thing has taught me that I can actually do hard things. Like, I'm eleven years old running a business with real customers. I'm doing something most adults haven't even tried. That's given me confidence in other areas of my life that I didn't have before.
So yeah, turning 12 tomorrow feels different than I expected. I'm not just a year older. I'm someone who actually built something and keeps building it. And I really want to say thank you guys for supporting me and my business. Seriously, you guys make this possible and it means so much to me. That's pretty cool.
